Date and Apple Squares

I find these a bit crumbly so tend to keep them as an after school snack, rather than let them rattle about in their lunch box all day. However, I also found that I could not stop eating them, so you may want to put them in lunch boxes just to get them out of the house!



Ingredients
150g ready chopped dates
1 Medium Dessert Apple, peeled, cored and chopped in to small pieces
200ml Water
150g Unsalted Butter

100g Caster Sugar
2 tbsp Golden Syrup
100g Self Raising Flour
150 Porridge Oats
40g Sunflower Seeds  

Recipe

Preheat oven to 180°C. Prepare an 8x8 inch square cake tin by greasing or with parchment paper.

 

In a medium saucepan, combine the dates, apple and water and simmer for 5 minutes. Remove from heat and drain. 

 

Heat the butter, sugar and syrup until combined and then tip in the flour, oats and seeds until well combined. Add the dates and apple and stir again. 

 

Tip in the lined cake tin and bake for 25 - 30 minutes. It should be brown on the top but still a little soft to touch.
