Yes I still have apples in the garden, so this is not the last apple based recipe you will see...... it's the tree that just keeps on giving, so I am taking action and trying recipes that use more apples. Many of the recipes I have are only allowing me to use a couple of apples at a time (and that's just not enough) so this one seemed perfect. Apple is the only ingredient (almost).
Serve them still warm but not straight from the oven (bubbling hot fruit
and children are never a good mix), with a lovely big scoop of vanilla
ice cream.
The children looked very suspicious when I served these up but I made my usual promise of NEVER to cook them again IF they didn't like them.... thankfully they (and Ian and I) loved them and especially Rufus. I made the mistake of breaking one of the apples when I cored it, so Eliza took great delight in telling me it looked like an exploded brain. Although, I have concluded that this was a good thing as it just made them all the more interesting!
Ingredients
5 Medium Eating Apples
50g Unsalted Butter
100g mix of Raisins and Currants (you could also include other fruit, like prunes)
2-3 tbsp Light Brown Sugar (light Muscovado preferably)
Juice of 1 Lemon
Method
Core the apples, being careful not to break them around the sides. This is what makes them look like an exploded brain!
Mix the raisins with the sugar and lemon.
Place the apples on a lined baking tray, with space between each one and then spoon the mixture in to the centre of the apples.
Place a knob of butter on top of each apple (push it in slighty with your fingers).
Bake in the oven for about 50 minutes.
