I will endeavor to try them all and once I do I will post a photo and some feedback from the children.
The first one is from Liz, mum to Ezra and Otis.
Pan Fried Fish
Lightly fry some chopped Spring Onions in oil and add a tsp of Curry Powder and / or Turmeric (or more depending on what your children like).
After about 5 minutes and when the onions are soft, add in some Smoked Haddock or Cod or whatever fish you want! Add some water (don't cover it, just enough to cook in), put a lid on the pan and let it cook for about 10 mins.
Meanwhile boil some rice to have with the fish.
You can also add Coriander, if the children will eat it. I then check the cooked fish for bones. Put it with the rice. Pour on some of the sauce and top with chopped Red, Yellow and Green Peppers.
I tried this one yesterday and the kids loved it, hence the empty plate....
I added some Milk and Parsley to the recipe above (to cool down the curry powder as I got a bit trigger happy with it!). I also served it with potatoes as this week the children have decided they don't like rice.
This weeks meal suggestion from Julianne Clark (look out for pictures later in the week).
Turkey, Bacon and Mushroom Hotpot
Ingredients : turkey breast (uncooked the same as chicken breast), bacon (all fat cut off and chopped), small button mushrooms sliced, a couple of spring onions chopped, chicken stock, pepper and some chilli..
Use a pot, not a frying pan. Oil in bottom of pot, put in chopped up turkey breast and cook, just before turkey looks cooked put in bacon, stir and cook together for a few mins. Add sliced mushroom and spring onion, cook for a few more mins. Add pepper (I use lots but up to you) and either a stock cube or knor stock gel pot, sprinkle chilli flakes, stir and let cook for 1 min. Dissolve another stock in boiling water and pour in to pot just almost covering the contents, turn down to a simmer for 15 mins. I add more pepper here too but it's a personal choice. Once cooked, leave to cool, chop up any big bits of turkey you see and put in to pots. I cut Toby's up smallish as he only has two teeth but big enough he can pick up with two fingers. When you get the turkey breast I normally cut out the white line running down the middle as it gets tough during cooking. x
If you have a recipe to share, let me know and I'll add it to the blog x
