This was last nights quick family meal. It's too simple (and cheap!) not to share.
It was enough for all of us (2 adults and 3 children)
Ingredients
300g Penne Pasta
150g Green Beans or Frozen Petite Pois Peas
2 tbsp Olive Oil
2 tbsp Lemon Juice
200g Smoked Mackerel, skinned and flaked
100g Creme Fraiche
1 tbsp Creamed Horseradish
Instructions
Cook the pasta according to the packet instructions. For the last 5 minutes add the green beans or peas (they only need 3 minutes). Drain the pasta and beans / peas and return to the pan (reserving a little of the cooking water). Add a good drizzle of olive oil to the pasta along with the lemon juice and stir. Season with some black pepper.
In a separate pan mix the creme fraiche with the horseradish and reserved cooking water and warm slightly (I mean very slightly, just to help mix it up). Mix the pasta and beans / peas with the crème fraiche mixture and then add the flaked mackerel. We served it on a bed of mixed salad for adults and with some chopped cucumber and tomato for the kids.
