You don't have to use the left overs from your roast for this one, but it really adds to the flavour if you do. It is really quick to make and if you prefer, you could add different veg to the ones listed below (Courgette, Mange Tout, Pok Choi etc).
This fed 5 children so just vary the amounts according to how many you are cooking for. Don't worry too much about exact amounts of the flavorings, it's the sort of dish you can just keep tasting and adding to as you go along.

Ingredients
Medium Dried Egg Noddles. I use one nest / strip for about 2 children (you could use fresh if you have some, so no need to do the cooking part just add at the end)
2 tbsp Groundnut Oil or Rapeseed Oil
2 Cloves Garlic, Sliced
250g left over Chicken, cut in to small pieces (It's nice if you sort of tear it apart rather than dice). As with the noodles, you could use fresh, just make sure you cook for a few minutes longer at the beginning and end until cooked through.
Fresh or Ground Ginger. About an inch, finely grated if fresh and 1-2 tsp if ground
3 Spring Onions (you could also use 1/2 red onion)
1 Red Pepper, diced
A few stalks of Broccoli, chopped in to small pieces
5 or 6 Mushrooms, sliced
3 to 4 tbsp Soy Sauce (you could also add a small amount of fish sauce or go half and half with soy and fish sauce)
1 tbsp Honey
Sesame Seeds (if you have some)
Fresh Coriander (if you have some)
Recipe
Put the noddles on to cook according to pack instructions. When the noodles are done, drain and run under cold water to stop the cooking process. Set aside.
Heat the pan and dry fry the sesame seeds for a couple of minutes. Set aside.
Heat the oil in the pan, then add the garlic and fry for a couple of minutes.
Add the veg and fry for at least 5 minutes until it all starts to become tender.
Tip in the cooked chicken and keep frying for a few minutes until the chicken is warmed through.
Mix together the soy sauce and honey, pour over the veg and chicken and stir well. Add more soy sauce according to taste.
Add the noodles, sesame seeds, coriander and mix well. Serve immediately.
